Punjabi Kadhi with Beetroot | Yogurt Based Curry served Pan Fry Potato Fritters | Vegetable Kadhi Lunch Recipe

In Punjabkadhi is a simple, quick meal. Made from besan (chickpea or gram flour) to thicken the consistency, and adding pakoras, it is eaten with either long-grain basmati rice or, more commonly, with a roti. There are several variations of this food that can be found in states such as Delhi, Haryana, Uttar Pradesh, Bihar, Punjab, Rajasthan, and Gujarat.

Punjabi Kadhi got a makeover of pretty pink from beetroot, chickpea flour, greek yogurt. It’s delicious, nutritious and this pinkish beetroot kadhi pairs best with pan-fried potato fritters and served hot steamed rice. It’s an excellent lunch recipe packed with carbs and protein, that your family will love it.

Vegetable Kadhi Lunch Recipe

Whenever I find cooking is becoming dull and boring, I buy beets. The bright red root vegetable is packed with fiberfolate (vitamin B9), manganese, potassium, iron, and vitamin C and its bright pink color adds a little color to my life and in my cooking as well. πŸ™‚ πŸ™‚

My Favorite Vegetable – Beets

The Beetroot imparts a beautiful pink color to this dish. Naturally sweet, spices perfectly blend with beets and it tastes delicious. This kadhi has the goodness of yogurt as well as vegetables fused in a very wholesome manner. I already shared spinach based yogurt kadhi and it always hit in my family. 

Vegetable Kadhi Lunch Recipe

Traditionally, the kadhi is loaded with chickpea flour or besan fritters also called pakoras or bhajji. Pakoras are made with sliced onions, potatoes coated in a spicy chickpea batter and deep-fried. But I am not a fan of fried food neither my husband. I always make pan-fried pakoras and it tastes as yummy as the fried ones. Add on I made pakora batter with chickpea flour and oats flour.

Beetroot Kadhi | Yogurt Based Curry served Pan Fry Potato Fritters

This yogurt based spiced, sweet and tangy beetroot curry is a twist on Punjabi kadhi. It is easy, light and perfect for warm summer months. The crispy pan fried potato fritters adds textural contrast to the smooth kadhi.

Ingredients:
Low Fat Curd – 1 cup
Chickpea flour – 4 tbsp
Beetroot – 1 medium
Chopped garlic – 4
Coriander powder – 2 tsp
Red chilli powder – 1 tsp
Fenugreek seeds – 1/2 tsp
Fennel seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Red chilli powder – 1 tsp
Oil – 2 tbsp
Water – 2 or 3 cups
Salt to taste

For Pan or Tawa Fried Pakoras:
Boiled potatoes – 4 medium size
Chickpea Flour – 1/2 cup
Oats flour – 1/4 cup
Semolina or Rava – 2 tbsp
Red chili powder – 1/2 tsp
Turmeric – 1/4 tsp
Coriander powder – 1 tsp
Roasted cumin powder – 1/2 tsp
Salt to taste
Water – 1/2 cup
Oil for pan frying

Method:

  1. Boil medium size beetroot in a pressure cooker and allow to cool down completely. Then peel the boiled beetroot and cut boiled beetroot into small cubes. Blend in a mixer without adding water and make a smooth paste. Keep it aside.
  2. For Pan or Tawa Fried Pakoras: Combine chickpea flour, oats flour, semolina, red chili powder, coriander powder, roasted cumin powder, turmeric, salt with a half cup of water in a bowl and make a smooth batter.
  3. Peel boiled potatoes and cut them into round thin slices. Heat tawa or pan and grease with little oil. Dip boiled potato slices in the batter and place on heated tawa on low flame. Put little oil around all pakoras. Allow it cook till crisp and brown. Flip and roast until golden brown. Sprinkle some red chili powder and chaat masala. Keep them aside.
  4. Yogurt mixture: In a blender add yogurt, chickpea flour, garlic, red chili powder, coriander powder, salt with 1 cup of water in a grinder. Pulse twice to combine and keep it aside.
  5. Heat 1 tbsp of oil in a kadhai. Add fenugreek seeds, fennel seeds, and cumin seeds. Saute for a few seconds.
  6. Now add the yogurt mixture and the remaining 1 & 1/2 cups of water. Mix them well.
  7. Cook for 20 minutes on low flame till it becomes little thick and creamy.
  8. Now add boiled beetroot puree and mix with kadhi. Lower the gas flame and cook for 8 minutes.

Chopped cucumber – 1
Green apple – 1 (chopped with skin)
Chopped kiwi – 1 (without skin)

  1. In a blender add a chopped apple, cucumber with kiwi and salt.
  2. Blend everything until smooth. Enjoy delicious and quick smoothie.

Making your own peanut butter is super easy. It takes a few minutes to transform whole peanuts into warm and creamy, delicious homemade peanut butter. Place roasted and skin removed peanuts in a food processor. Turn the food processor on and let it run for 4-5 minutes. Roasted peanuts will go from crumbs to a dry ball to a smooth and creamy liquid Peanut Butter. Stir in the brown sugar, honey, or salt, if you want.

Combining two classic flavors – Banana and Homemade Peanut Butter in one super moist CAKE and it’s a perfect treat for kids in the summer holidays. It’s made with whole wheat, banana, peanut butter that make this cake packed with nutrients and a delicious flavor.

Healthy Tea Treat

Ingredients :
Ripe banana – 4 (small size)
Whole wheat flour – 1 & 1/2 cups
Brown sugar – 1/4 cup
Refined oil – 1/4 cup
Homemade peanut butter – 1/2 cup
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Roasted & crushed for toppings
A pinch of Himalayan pink salt

No Oven Cake

Method :

  1. Dry Ingredients – Sieve whole wheat flour, baking soda, baking powder, salt, directly in the bowl.
  2. Wet Ingredients – In a mixer add bananas, brown sugar, oil, peanut butter and grind it into a smooth paste.
  3. Now mix wet and dry ingredients well. Put the batter into a greased pan. Sprinkle topping over batter and with help of spatula press nuts gently.
  4. Tab the pan on a countertop to release any large air bubbles.
  5. Put the pan into the preheated pressure cooker and bake it for 1 hour.
  6. When the cake is done, allow to cool for 10 minutes. Remove the cake from the pan and set them on a rack set over a tray or sheet pan.
  7. Allow the cake to cool completely before slicing and enjoy.

  1. Adjust brown sugar according to your taste.
  2. Baking time may vary.
  3. If cake batter looks dry, add 2- 4 tbsp of milk.
  4. If baking in Oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour. The baking time may vary. So keep checking the cake after 40 to 45 minutes.

Grease the baking tin with oil and dust it by sprinkling whole wheat flour over greased surface evenly. Pour the mixture into the greased baking tin.

  • Use the baking tin of 6 inches in diameter, so that it can easily get into the pressure cooker.
  • Use a 5-liter pressure cooker. It should be big enough to hold the baking pan.
  • Baking Tin should be made of Aluminium.
  • If baking tin comes into direct contact with the base of the pressure cooker, it can burn ( overbake ) the cake. So use pressure cooker container which has big holes in it or any aluminum small stand.
  • No gasket and whistle are needed. Remove them before baking.
  • Don’t add water to the pressure cooker.

  1. Heat the pressure cooker on high heat for 2 minutes. Use sea salt or sand as a layer inside a cooker. Put a steel stand on a layer of salt or sand.
  2. Now put the cake tin containing the cake batter ( Do not put water inside the pressure cooker).
  3. Close the pressure cooker lid and do not put the whistle on the lid. Remove the gasket (rubber ring) from the lid.
  4. Lower the flame after 2 minutes. Let it bake for 50 -60 minutes on low flame. After 60 minutes check cake with a knife, if the mixture does not stick, it means the cake is done.
  5. If batter still sticks to knife then again bake for another 10 minutes. Do not open the lid immediately.
  6. Eggless Pressure Cooker Cake is ready.

Whole Wheat Carrot Banana Cake | Healthy Carrot Cake | Wholesome Fruit Cake

Ingredients :

  6. Sprinkle topping over batter and with help of spatula press nuts gently.

When I saw these rainbow carrots I knew I will be using these in my next recipe. This recipe is so easy and with few ingredients – olive oil, garlic powder, red chili powder, salt, pepper, dried coriander powder, and roasted sesame seeds.

Carrots are eaten in a variety of ways. They are eaten raw as a snack and in salads. It is common for them to be chopped, boiled, fried, stir-fried or steamed, and cooked in soups and stews. Orange may be their best-known color, but carrots also come in white, yellow, red, magenta, and purple.

The taste difference between different colored carrots like orange, purple, red, white, and yellow isn’t extreme. It’s often slight and it’s subtle, mainly showing up when eating carrots raw. You can also understand the taste difference in different colored carrots by cooking them up or roasting them.

Rainbow Roasted Carrots

These carrots are roasted in the oven until tender and slightly crunchy in the middle. then toss with roasted sesame seeds. Yummy :), These roasted rainbow carrots are sweet, savory, and super delicious.

Healthy Salad

Ingredients:

Whole carrots, peeled, washed, and dried – 8

 Olive oil – 3 tbsp

Red chilli powder – 1/2 tsp

Dried coriander leaves powder – 1 tsp

Garlic powder – 1 tbsp

Roasted sesame seeds – 1/4 cup

Juice of half lemon

 Himalayan pink salt and pepper to taste

Yummy Side Dish Recipe

Method:

  1. Preheat oven to 200 C.
  2. On a baking sheet, toss carrots with olive oil, salt, pepper, garlic powder and red chilli powder. Arrange in a single layer and roast for 40 minutes. Stirring once, until fork tender and browned on outsides.
  3. Before serving toss roasted carrots with sesame seeds, dried coriander powder and lemon juice.
  4. Serve these roasted carrots as side dish or enjoy as salad with greek yogurt.

Rajma Curry ( Red Kidney Beans Curry) – Two Ways : Tomato Based Curry & Spinach Based Curry

The good old Rajma is one of the most favourite dish in a North Indian household. Rajma curry is a red kidney bean curry that is a very popular dish in Northern India, especially in Punjab. Red kidney beans or rajma are cooked in warm spices, tomatoes and onions. The long hours of cooking imparts mesmerizing aroma and spell-binding flavour that you just cannot resist at one serving. Served hot along with plain rice or chapati.

Rajma Curry – Tomato Based Curry & Spinach Based Curry

Kidney bean or rajma is a must-have legume that is widely used in various traditional dishes in India and abroad. It takes its name from appearance and resemblance to colour of kidney beans. These nourishing legumes are procured from the herbaceous plant, scientifically termed Phaseolus vulgaris. Although native to Mexico and Central America, different varieties of these beans are extensively cultivated across the world, including in India.

Served with Steamed White Rice

It is my son Reyansh who gave this idea to make Spinach Based Rajma Curry. He generally loves tomato and onion based curries but not a spinach fan. Today when I told him that I am making his favorite Rajma curry he surprisingly asked me to add spinach in it. I was doubtful that he will not eat curry with spinach so, I made two curries – Tomato-Based Rajma Curry and Spinach Based Rajma Curry. Guess what? Reyansh likes Spinach Based Rajma Curry more. Happy Mommy πŸ™‚

Tomato Based Rajma Curry is cooked in a tomato onion gravy enriched with Indian spices makes you ask for more. Rajma Masala is usually had with steaming hot rice along with lemony and spicy onion cucumber salad.

Tomato-Based Rajma Curry 

Spinach Based Rajma Curry is a north Indian delicious curry made with spinach and rajma. Rajma, or kidney beans, are a treasure trove of health benefits. It is an excellent source of dietary fibres, which help boost your digestive system and also keep your heart healthy. Spinach which is known as palak is a storehouse of iron. Together they make a delicious wholesome meal.

Spinach Based Rajma Curry

Rajma Curry ( Red Kidney Beans Curry) – Two Ways – Tomato Based Curry & Spinach Based Curry

Ingredients :
Rajma ( soaked overnight ) – 2 cups
Spinach – 2 bunches
Chopped onion – 3
Chopped ginger – 2 inch
Chopped garlic – 6
Chopped green chilly- 2
Chopped Tomatoes – 2
Juice of one lemon
Oil – 4 tbsp
Butter – 2 cubes
Dry coriander leaves powder – 1 tbsp

Spices:
Cumin – 1 tsp
Turmeric – 1/2 tsp
Coriander powder – 3 tsp
Red chilli powder – 1 tsp
Rajma masala- 1 tsp
Salt to taste

Whole Garam Masalas:
Cinnamon stick – 1 inch
Clove – 3
Black cardamom – 2
Bay leaf – 1

My Favorite Meal

Method:

  1. Put soaked Rajma with 2 cups of water, a pinch of salt, whole garam masalas and turmeric in a pressure cooker. Mix them well and pressure cook for 3 whistles. Allow the steam to escape before opening the lid. Divide boiled rajma into two equal parts ( 1 cup each).
  2. Check to see the Rajmas are cooked. Take one between your fingers and if you press it, it should squish. Keep them aside.
  3. Remove stems from the spinach and wash thoroughly in running water. Blanch in salted boiling water for two minutes. Now transfer boiled spinach into ice-cold water to retain the green color. Squeeze out excess water and grind it into a smooth puree (Add lemon juice while grinding). Keep it aside.
  4. Heat 1 tbsp oil in a deep non-stick pan and add cumin seeds.
  5. Allow to the seeds to crackle. Then add chopped onions and saute on a medium flame until translucent. Now add ginger, garlic, green chili and cook for 5 minutes on the medium-low flame.
  6. Then add chopped tomato and cook until they’re soft. Now allow to masala to cool completely and then grind it into smooth paste.
  7. Heat 2 tbsp oil in a same deep non-stick pan. Add red chilli powder (low heat) and add pureed onion tomato mixture. Mix it well.
  8. Then add coriander powder, turmeric, rajma masala, salt, and cook until masala leaves oil on low heat.
  9. After masala is prepared take out 1/2 cup of prepared masala (for spinach gravy) and keep it aside.

Tomato Based Gravy :

  1. Take 1/4 cup (From 1 cup) of boiled rajmas on a plate. Gently mash them with a potato masher.
  2. Now add mashed boiled rajmas in a prepared masala and cook for 3 minutes on the medium-low heat.
  3. Now the remaining boiled rajma, one butter cube and mix them well. Close the lid and cook Rajma for 2-5 minutes on high heat.
  4. Tomato based Rajma curry is ready to serve. Serve with plain white rice.

Spinach Based Gravy :

  1. Heat 1 tbsp oil in a deep non-stick pan and add prepared onion tomato masala (1/2 cup).
  2. Now add puree spinach, little salt and boiled rajma. Cook on low flame for 5 minutes.
  3. Now add 1/2 cup water and cook on low flame for another 5 minutes. Do stir curry after every 1 to 2 minutes.
  4. Switch off the flame and add one cube of butter. Stir it once. Serve hot with plain rice or paratha or chapati.
