And it’s never too late to remember all these heroes, who had sacrificed their lives for India.

The President of India delivers the ‘”Address to the Nation” on the eve of Independence Day. India’s Prime Minister unfurls India’s flag and delivers a speech at the Red Fort in Old Delhi. Flag hoisting ceremonies and cultural programs are held in the state capitals and often involve many schools and organizations. In the cities around the country, the National flag is hoisted by politicians in their respective constituencies. In various private organizations, the flag hoisting is carried out by a senior official of that organization.

Growing up in India, we woke up early morning to attend the flag hoisting ceremonies and parades at our school every year. Some years our school participated in a huge parade where all schools came together to celebrate and sing patriotic songs. India’s flag and its tricolors were all around us.

So today I surprised my family with Tricolor salad – Carrot Noodles With Orange Juice Dressing, Crispy Sesame Tofu with Greek Yogurt Dressing, and Baked Broccoli with Spicy Cucumber

Carrot Noodles With Orange Juice Dressing

Rather than thin slices or half-moons, the spiralizer transforms carrots into curly noodles. For making carrot noodles I used a julienne peeler. Carrots are rich in beta-carotene, a compound your body changes into vitamin A, which helps keep your eyes healthy. And beta-carotene helps protect your eyes from the sun and lowers your chances of cataracts and other eye problems.

Homemade salad dressings are my favorite. They are so much better than the store-bought versions and healthier. You get to control what goes into them and skip out on all the preservatives. Oranges (My Favorite Fruit) make a great base for any salad dressings because they are naturally sweet, a little acidic.

Crispy Sesame Tofu with Greek Yogurt Dressing

Tofu is a good source of protein and contains all nine essential amino acids. It is also a valuable plant source of iron and calcium and the minerals manganese. In addition to this, it also contains magnesium, copper, zinc, and vitamin B1. Most recipes (roasting, frying, stir-frying, or deep-frying) require the tofu to be drained well and patted dry before cooking. Why does Tofu need to Be Pressed? Because moist tofu doesn’t absorb marinades or spices and splatters in the pan. Pressing improves the texture of tofu as well.

How to press Tofu? First, wrap a block of tofu in a kitchen paper towels (Fold a kitchen paper towels into quarters to increase the absorbency). Then again wrap tofu with a clean kitchen towel. Place wrapped tofu on a chopping board. The essence of pressing tofu is to apply steady weight to squeeze out the moisture from the block. I put a chakla (flat circular rolling board) or you can put a big pot filled with water.

Baked Broccoli With Spicy Cucumber

Broccoli is a good source of fiber, protein, iron, potassiumcalcium, selenium, and magnesium as well as vitamins A, C, E, K, and a good array of B vitamins including folic acid. Broccoli is my favorite vegetable, and this roasted broccoli is my favorite way to enjoy it. It results in the best-tasting broccoli with a perfect texture that is crispy, tender, perfectly seasoned with garlic, and Indian spices.

This salad may require a little extra effort but it’s so worth it. Spiralized carrot ‘noodles’ replace traditional pasta and soaked in spicy orange dressing. The ‘noodles’ along with other healthy veggies – Crispy baked sesame tofu and baked broccoli with garlic.

Carrot Noodles With Orange Juice Dressing

Ingredients:

Carrot noodles – 4
A pinch of salt

Spicy orange dressing :
Fresh orange juice – 1/2 cup (from 2 oranges)
Juice of half lemon
Extra virgin olive oil – 1 tsp

Spices for dressing :
Roasted cumin powder – 1/4 tsp
Black pepper powder – 1/4 tsp
Red chili flakes – 1/2 tsp
Roasted fennel powder – 1/8 tsp
Black salt – 1/8 tsp
Dry coriander leaves powder – 1/4
Salt to taste

Carrot Noodles With Orange Juice Dressing

Method :

  1. For the spicy orange dressing – Place fresh orange and extra virgin olive oil, lemon juice with spices in an airtight container and shake well, or whisk ingredients in a bowl.
  2. In a large microwave safe bowl add carrots noodles with a pinch of salt and sprinkle some water. Microwave high for 5 minutes.
  3. After 5 minutes let it cool completely.
  4. Once carrots noodles cool down completely mix with spicy orange dressing.

Crispy Sesame Tofu with Greek Yogurt Dressing

Ingredients:

Pressed Tofu (Cubed) – 200 gms
Sesame seeds – 1/4 cup
Olive oil – 3 tbsp

Marination Ingredients :
Roasted cumin powder – 1/4 tsp
Black pepper powder – 1/4 tsp
Red chili powder – 1/2 tsp
Grated garlic – 3 tbsp
Black salt – 1/8 tsp
Olive oil – 3 tbsp
Juice of one lemon
Salt to taste

Serve with Greek Yogurt Dressing : Greek yogurt ( 1 cup)combined with lemon juice (2 tbsp), garlic powder (1/4 tsp), and salt to taste. Mix it well and serve.

Crispy Sesame Tofu with Greek Yogurt Dressing

Method:

  1. In a small bowl combine the olive oil and all marination ingredients. Pour this mixture over tofu cubes. Let it sit for about 20 minutes.
  2. Take marinated tofu cubes and coat them with sesame seeds.
  3. Bake for 10 to 15 minutes, at 200 C. Tossing the tofu halfway, until the tofu is deeply golden on the edges.
  4. Toss baked tofu with greek yogurt dressing and serve.

Baked Broccoli With Spicy Cucumber

Ingredients:

Broccoli cut into florets of even size – 2 big size
Cucumber cut into lengthwise – 2 medium size

Marination Ingredients for broccoli
Black pepper powder – 1/4 tsp
Red chili powder – 1/2 tsp
Grated garlic – 3 tbsp
Olive oil – 3 tbsp
Juice of one lemon
Salt to taste

Spices for Cucumber Salad
Roasted cumin powder – 1/4 tsp
Black pepper powder – 1/4 tsp
Red chili powder – 1/2 tsp
Black salt – 1/8 tsp
Juice of one lemon
Salt to taste

Baked Broccoli With Spicy Cucumber

Method:

  1. Preheat oven to 200 C.
  2. In a large bowl toss the broccoli florets with marination (ingredients mentioned above) until lightly coated.
  3. Arrange the broccoli florets in a single layer on a baking sheet.
  4. Roast at 200 C for 20 minutes until cooked through (check by poking with a fork, should be fork tender) and lightly browned.
  5. In a big bowl add cucumber with spices (ingredients mentioned above) and mix them well.
  6. Serve baked broccoli with spicy cucumber salad.

Janmashtami Parshad | Dhania Atta Panjiri | Banana Panjiri Prasad

Janmashtami fasting is incomplete without offering sweet prashad or bhog. Dhaniya panjiri is a traditional bhog or parshad recipe that is offered to Lord Krishna, especially on Janmashtami. The coriander panjiri recipe is prepared with powdered coriander seeds and roasted makhana with sugar and lots of dry fruits added to it.

The aroma of the coriander powder and green cardamom powder, with the sweetness of the sugar and crunchiness of the dry fruits, make it a perfect dish to those who fast on Janmashtami. On the Janmashtami day, this prasad is offered to Lord Krishna after prayers and distributed among the family as prasad.

Dhania Atta Panjiri

I grew up in Chandigarh. So,Panjiri is in my blood :). My mom used to make panjiri with wheat flour, little Rava, lots of ghee, sugar or jaggery, was heavily laced with dried fruits and herbal gums. She always adds one banana with one bowl of panjiri. It used to our (Me & My brother) evening snack with a glass of milk.

During Janmashtami, wheat flour is replaced with coriander seed powder to offer to God. The wheat flour panjiri is replaced because consuming grains are generally not allowed during fasting.

But, I made this panjiri with whole wheat flour and homemade grounded coriander seeds powder, dry coconut, dry fruits. For Banana Panjiri Prasad I just tossed banana slices in prepared panjiri ( Just like my Mom).

Bhog For Lord Krishna

Ingredients:

Homemade Dhania powder(coriander powder) – 1/2 cup

Whole wheat flour – 1/2 cup

Roasted and crushed Phool makhana – 1/2 cup

Powdered sugar – 1/4 cup

Green cardamom powder – 1/2 tsp

Chopped dry fruits – 1/2 cup

Roasted dry powdered coconut – 1/4 cup

Ghee – 6 tbsp

Banana slices

Hare Krishna Bhog

Method:

  1. Coarse dry fruits powder: Add roasted, crushed phool makhana, chopped dry fruits, roasted dry powdered coconut, green cardamom powder in a blender. Blend to make a coarse powder. Keep it aside.
  2. Heat the 3 tbsp ghee in a pan. Fry the flour until lightly brown.
  3. Switch off the flame and take out on a separate plate.
  4. Again heat 3 tbsp of ghee in the same pan and roast homemade coriander powder.
  5. Stir continuously on a low flame for about 2-3 minutes, to avoid these from burning at the bottom.
  6. Mix coarse dry fruits powder, roasted whole wheat flour, and coriander powder. Mix them well.
  7. For Banana Panjiri Prasad just tossed banana slices in prepared panjiri.

Janmashtami Sweet Dish | Malpua Served With Kheer | Banana Malpua with Whole Wheat & Oats Flour | Pan Fried Malpua

Janmashtami is a widely celebrated festival by the devotees of Lord Krishna. Janmashtami falls on 11th August this year. It is said the Hindu God – Lord Krishna was born on this auspicious day. The festival is celebrated all over India with great enthusiasm and devotion. According to scriptures, Lord Krishna was the eighth incarnation of Lord Vishnu. It was prophesied that Lord Krishna would kill his uncle Kansa and rid Mathura of his cruelties. Krishna also played an instrumental role in the epic battle of Mahabharata and helped Pandavas win the war against their brothers Kauravas.

On this day people buy new clothes, ornaments for Lord Krishna, and also prepare a feast of 56 dishes or ‘chappan bhog’ to offer to the god. This bhog usually comprises dishes and desserts which are believed to be Krishna’s favourite, and include makha, malpua, jalebi, rabri, khichdi, and many more.

I still remember back in India, we used to visit the temple on the eve of Janmashtami and enjoy the beautiful recreation of Lord Krishna Jhakis. The temple crowded with thousands of devotees of all age groups, who come to seek God’s blessings.

When Reyansh, my kid was 1 year old we were at my mom’s place on Janmashtami so dressing up like “Kanha” was mandatory. It was his first Janmashtami (2011). Looking into his small golden mukut now it amazes me how kids grow so fast. My mom is a great cook and she made malpua, kheer (makhana kheer), and Lord Krishna’s favorite (and Reyansh’s too) – Makhan (White Butter). We grew up eating white butter with parathas and my son also loves it.

Here in the Netherlands, we want Reyansh to know about our culture and festivals. So we always try to celebrate all Indian festivals.

For me, the celebration is incomplete without yummy food, especially CAKES. Last week on Raksha Bandhan, I baked Special Raksha Bandhan Cake for my brother and my cousins and missed them all. On eve of Krishna Janmashtami, I made Malpua with banana, whole wheat flour, oats flour with little rava, and served with  Custard kheer and Rooh Afza Kheer.

Malpua is a traditional North Indian sweet of soft, fluffy and crisp pancakes coated with sugar syrup and served with kheer or rabri. Malpuas are made with maida or all purpose flour, semolina, milk. There are so many varieties of malpuas available like mawa malpua, apple malpua, paneer malpuas, also malpuas are flavored with cardamom and fennel seeds (sounf).

Janmashtami Sweet Dish | Banana Malpua with Whole Wheat & Oats Flour

Eating healthy during festivals takes real effort. I always try recipes that can be prepared with alternative healthy ingredients. So in this Malpua recipe, I replaced all-purpose flour with whole wheat flour and oats flour. Instead of dipping malpua in the sugar syrup, while making batter I added ripe banana to make malpua a little sweet and soft. Add on bonus, this soft malpua are pan-fried with little oil.

Malpua With Custard and Rooh Afza Kheer

Ingredients:
Whole wheat flour – 1/2 cup
Oats flour – 1/2 cup
Greek yogurt – 1/2 cup
Water – 1/4 cup
Rava – 4 tbsp
Ripe banana – 2
Chopped dry fruits – 1/4 cup
A pinch of salt
Oil for roasting

Serve with Custard Kheer & Rooh Afza Kheer

Festive Sweet Thali

Method:

  1. In a bowl mix mashed banana with help of fork. Then mix with whole wheat flour, oats flour, yogurt, water, rava, and salt. Mix them well and keep it aside for 10 minutes (covered).
  2. Heat a nonstick pan over medium-low heat. Grease it with little oil.
  3. When the pan is hot, pour a ladle of batter in the center of the pan.
  4. The batter will spread itself otherwise spread it with the help of a spoon. Don’t make it thin like pancake has to be thick.
  5. Cook on low heat until bubbles form on the surface. Then flip it over to the other side and cook until it’s done.
  6. Repeat the same process for the rest of the batter.
  7. Place 3 or 4 yummy malpua on a serving plate. Garnish with some chopped dry fruits, Serve with kheer.

Tip: For Rooh Afza kheer, mix 2 tbsp of Rooh Afza syrup in regular kheer and mix it well. Pinky and rose flavoured kheer is ready.

My Favorite Kheer

Ingredients :

Grated Zucchini – 1 medium size ( squeezed and dry )

Full fat milk –3 cups

Fresh thick cream – 1/4 cup

Sugar – 1/2 cup

Ghee – 3 tbsp

Roasted Fennel Powder – 1/2 tsp

Green Cardamom powder – 1/2 tsp

Sliced almonds & pistachios– 1/4 cup

A pinch of Himalayan pink salt

Yummy Delicious Dessert

Method :

  1. Heat ghee in a nonstick deep kadhai and add squeezed dry zucchini. Cook till on a low flame for 5-8 minutes.
  2. Then add two cups full-fat milk bring the whole mixture to a boil and then lower the flame.
  3. Cook the mixture on a low flame and keep on stirring in between. When the milk reduced to 75% then add sugar and mix it well.
  4. Then add remaining 1 cup of milk and cook for 6 minutes. Stir continuously.
  5. Then finally add cardamom powder, roasted fennel powder, salt, and mix well.
  6. Garnish with sliced almonds, pistachios and its ready to serve.

Amazing combination of two vegetables – Beetroot and Carrot. Beetroot Carrot Halwa is a perfect dessert to be served after a perfect Sunday brunch. It is a colorful and tasty dessert with all of the goodness of both the vegetables. Made with grated beetroot simmered in milk, sugar, spiced with green cardamom, and finished with pistachios.

Indian festivals are incomplete without sweets. As now Janmashtami is close, so I thought sharing some sweets recipes. Shri Krishna Janmashtami is celebrated all over India to mark the Birth Anniversary of Lord Krishna. This year it will be celebrated on 11 th August. All temples will be decorated with lights and flowers and at midnight, Krishna Janm” will be celebrated in most temples and houses.

Several sweet and savory items are prepared in each home for Janmashtami celebrations. Dhaniya ki panjiri, Sabudana khichdi, and Vrat Wale Aloo, and many more delicious recipes are made. Most Krishna devotees fast on Janmashtami and do only falahaar.

Beetroot Carrot Halwa

When it comes to beets, opinions are fiercely divided. Some people love them, and others will tell you that beets taste like dirt or like candy. But I love to add beetroots almost in everything – Cakes, Dips, Rava Halwa, Juice, even in dhoklas, jam, smoothie, in poha. Most commonly beetroot used in my home is in paratha. Recently I shared Beetroot Kadhi recipe, my son and husband loved it.

Beetroots are rich in nutrients that help to boost your immune system and can produce new blood cells. Whereas, Carrots Are rich in vitamin A, Vitamin C, Vitamin K, Vitamin B8, potassium, iron, copper, and manganese. Most of the benefits of Carrots can be attributed to their beta-carotene and fiber content. This root vegetable is also a good source of antioxidant agents. They are rich in vitamin A, Vitamin C, Vitamin K, vitamin B8, pantothenic acid, folate, potassium, iron, copper, and manganese.

Beetroot Carrot Halwa – Vegetable Dessert

This Halwa is a perfect sweet to be served hot after weekend brunch. Adding beets to carrot halwa not only gave beautiful color to halwa but also made it more delicious and healthy.

My Favorite Dessert

Ingredients :

Grated Beetroot – 1 cup ( 2 medium-sized beetroots)

Grated Carrot – 1 cup ( 3 medium-sized carrots )

Ghee – 1/4 cup + 2 tsp

Full fat milk – 1 liter

Sugar – 1/2 cup

Homemade Green Cardamom Powder – 1 tsp

Sliced pistachios – 1/4 cup

Himalayan pink salt a pinch

Healthy Vegetable Dessert

Method :

  1. Heat ghee in a non-stick deep pan and add grated carrot, beetroot. Saute on low flame for 5-8 minutes.
  2. Then add milk and cook on medium heat until the milk evaporates completely.
  3. Add sugar and simmer until it thickens. It takes about 5-8 minutes.
  4. Now add sliced pistachios and green cardamom powder with 1 tsp of ghee, a pinch of salt and mix them well.
  5. Serve hot.

Tips :

  • You can use a pressure cooker as it is easy and faster to prepare or you can microwave for 10 minutes (covered).
  • Increase or decrease sugar according to your taste.

Raksha Bandhan Special | Avocado Chocolate Cake | Healthier Chocolate Avocado Cake | Whole Wheat Flour Chocolate Avocado Cake

Raksha Bandhan is one of the most endearing ways to celebrate the bond between brothers and sisters. The festival is made up of two words, namely “Raksha” and “Bandhan.” As per the Sanskrit terminology, the occasion means “the tie or knot of protection” where “Raksha” stands for the protection and “Bandhan” signifies the verb to tie. Together, the festival symbolizes the eternal love of brother-sister relationship which does not mean just the blood relationships only. It is also celebrated among cousins, sister and sister-in-law (Bhabhi), fraternal aunt (Bua) and nephew (Bhatija) and other such relations.

We moved to the Netherlands in 2018, and so miss all festivals and family gatherings more than ever. As now Raksha Bandhan is close I am missing my brother, Rahul . He is four years younger than me and newly married, so we have a wonderful new addition to our family Ashu, my sister in law. So, there is one more reason to miss my family. Back in India Rahul used to visit our home on Raksha Bandhan and I love to prepare his favorite food. We used to talk all night with back to back cups of tea.

Since we moved to Netherlands it can’t be like what it used to be when we were together . This year I ordered customized rakhi for my brother and sister in law from this amazing artist called pahaadi_bhuli (found through Instagram). She lives in Pantnagar, Uttarakhand and is an Aipan Artist. She made these amazing customized rakhi and I loved it.

Raksha Bandhan celebration is considered incomplete without having some mouthwatering desserts. Cakes are ever trending as they tend to make us all rejoice by bringing the very essence of any festivals or occasions in a delicious cake. This time I made this beautiful Rakhi theme cake with Avocado and Chocolate. I am not a fan of cream on cakes so I used Chocolate hazelnut peanut butter and sprinkles to make this beautiful rakhi on top of the cake.

Lately, I shared many recipes with avocado and since then I have been dreaming about an avocado chocolate cake recipe. So, I get a perfect occasion to make this cake and it is super healthy made with whole wheat flour, no egg, no butter, and no all-purpose flour, and top of it beautiful rakhi art with chocolate hazelnut peanut butter and sprinkles.

With Avocado

Ingredients:
Whole wheat flour – 1 & 1/2 cup
Cocoa powder – 1/4 cup
Greek yogurt – 1 cup
Oil – 1/8 cup
Baking powder – 1 tsp
Baking soda – 1 tsp
Ripe Avocado (pitted and chopped)– 1
Dark brown sugar – 3/4 or 1 cup
Sesame seeds – 1/4 cup
A pinch of salt

For Rakhi design : Cookie cutter, Chocolate hazelnut peanut butter and sprinkles.

Method :

  1. Dry ingredients: In a bowl sieve flour, cocoa powder, baking powder, baking soda and salt. Mix them well and keep it aside.
  2. Wet ingredients: In a mixer add dark brown sugar, curd, and oil with avocado. Blend them until smooth.
  3. Mix wet and dry ingredients together. Put prepared batter into a greased baking pan.
  4. Sprinkle sesame seeds on the edges of the cake batter and with help of spatula press topping gently. Tab the cake pan on a countertop to release any large air bubbles.
  5. Put the cake pan into the preheated pressure cooker and bake it for 1 hour.
  6. For Rakhi design – Press a cookie cutter (flower shape or any other shape ) lightly on the cake. Spread Chocolate hazelnut peanut butter (flower shape) and add sprinkles of your choice. Tips:

  • Allow to cool down cake completely before making Rakhi design.
  • You can replace Peanut butter or any chocolate sauce with Chocolate hazelnut peanut butter.
  • Don’t over mix the prepared batter.
  • Don’t demould quickly allow it to cool down completely.
  • Baking time may vary.
  • Brown sugar can be replaced by white sugar.
  • If cake batter looks dry, add 2- 4 tbsp of milk.
  • If baking in oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour. The baking time may vary. So keep checking the cake after 40 to 45 minutes.

Pressure Cooker Method:

Grease the baking tin with oil and dust it by sprinkling whole wheat flour over greased surface evenly. Pour the mixture into the greased baking tin.

  • Use the baking tin of 6 inches in diameter, so that it can easily get into the pressure cooker.
  • Use a 5-liter pressure cooker. It should be big enough to hold the baking pan.
  • Baking Tin should be made of Aluminium.
  • If baking tin comes into direct contact with the base of the pressure cooker, it can burn ( overbake ) the cake. So use a pressure cooker container which has big holes in it or any aluminum small stand.
  • No gasket and whistle are needed. Remove them before baking.
  • Don’t add water to the pressure cooker

How to Bake In A Pressure Cooker?

  1. Heat the pressure cooker on high heat for 2 minutes. Use sea salt or sand as a layer inside a cooker. Put a steel stand on a layer of salt or sand.
  2. Now put the cake tin containing the cake batter ( Do not put water inside the pressure cooker).
  3. Close the pressure cooker lid and do not put the whistle on the lid. Remove the gasket (rubber ring) from the lid.
  4. Lower the flame after 2 minutes. Let it bake for 50 -60 minutes on low flame. After 60 minutes check the cake with a knife, if the mixture does not stick, it means the cake is done.
  5. If batter still sticks to knife then again bake for another 10 minutes. Do not open the lid immediately.
  6. Eggless Pressure Cooker Cake is ready.

Summer Sunshine Tea Time Treat | Custard Powder Cake

A golden sunshine color, soft and spongy cake recipe made with custard powder. It is perfect served with a warm cup of tea or coffee. 

Sunshine Tea Time Treat

Custard powder is mainly used to make dessert recipe like fruit custard. Most common recipe is fruit custard which is made with milk to form a thick sauce to top with fruits. I also make custard rice kheer with custard powder and it tastes delicious. I usually use custard powder in my cake recipes to give a nice yellow color. Some cake recipes with custard powder – Malai custard cake, Pumpkin cake and I always use custard powder in my most favorite cake – Orange cake.

Custard powder not only adds good aroma in baking it also makes them more delicious, and it gives beautiful golden yellow color after baking. This custard powder cake have perfect golden color with perfect texture that melts into your mouth and its eggless, butterless too.

Eggless Custard Cake
Ingredients

Flour – 3/4 cup ( I used 50-50 Whole wheat flour and All purpose flour)
Vanilla flavored custard powder – 90 ml ( 1/4 cup + 1/8 cup )
Baking powder – 1/2 tsp + 1/8 tsp
White Sugar – 1/2 cup
Oil – 1/4 cup
Milk – 3/4 cup
Colorful sugar sprinkles – 1/4 cup ( I use sprinkles after baking)
A pinch of salt

Method :
  1. Dry ingredients : Sieve flour, baking powder and salt. Keep it aside.
  2. Wet ingredients : Now add sugar, oil, milk and custard powder in a grinder and make a smooth batter.
  3. Mix both dry and wet ingredients. Put prepared batter into a greased baking pan. Tab the cake pan on a countertop to release any large air bubbles.
  4. Put the cake pan into the preheated pressure cooker and bake it for 1 hour.
