Ingredients :
Chilled Milk -2 cups
Honey or Sugar – 1 tsp ( Optional)
Papaya – 1 cup (Chopped )
Mango – 1/2 cup (Chopped)
Mix Dry Fruits – 2 tbsp

Pomegranate Pearls – 2 tbsp

Method :

  1. Mix all the above ingredients together in a blender.
  2. Blend it until smooth and creamy.
  3. Garnish with nuts and pomegranate pearls. Serve chilled.

No Oven Cake

Ingredients :
Ripe Banana – 4 (small size)
Whole Wheat Flour – 1 & 1/2 cups
Brown sugar – 1/4 cup
Refined Oil – 1/4 cup
Cocoa powder – 1/8 cup
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Vanilla extract – 1/2 tsp
Sesame and flax seeds (3 tbsp each) for toppings
A pinch of Himalayan pink salt

Healthy Chocolate Treat

Method :

  1. Dry Ingredients – Sieve whole wheat flour, baking soda, baking powder, cocoa powder directly in the bowl.
  2. Add himalayan pink salt and mix all ingredients well.
  3. Wet Ingredients – In a mixer add bananas, brown sugar, oil, vanilla essence and grind it into a smooth paste.
  4. Now mix wet and dry ingredients well. Put the batter into a greased pan. Sprinkle topping over batter and with help of spatula press nuts gently.
  5. Tab the pan on a countertop to release any large air bubbles.
  6. Put the pan into the preheated pressure cooker and bake it for 1 hour.
  7. When the cake is done, allow to cool for 10 minutes. Remove the cake from the pan and set them on a rack set over a tray or sheet pan.
  8. Allow the cake to cool completely before slicing and enjoy.
Best Use of Ripe Banana

Tips:

  1. Adjust brown sugar according to your taste.
  2. Baking time may vary.
  3. If cake batter looks dry, add 2- 4 tbsp of milk.
  4. If baking in Oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour. The baking time may vary. So keep checking the cake after 40 to 45 minutes.

Pressure Cooker Method:
Grease the baking tin with oil and dust it by sprinkling whole wheat flour over greased surface evenly. Pour the mixture into the greased baking tin.

  • Use the baking tin of 6 inches in diameter, so that it can easily get into the pressure cooker.
  • Use a 5-liter pressure cooker. It should be big enough to hold the baking pan.
  • Baking Tin should be made of Aluminium.
  • If baking tin comes into direct contact with the base of the pressure cooker, it can burn ( overbake ) the cake. So use pressure cooker container which has big holes in it or any aluminum small stand.
  • No gasket and whistle are needed. Remove them before baking.
  • Don’t add water to the pressure cooker.

How to Bake In A Pressure Cooker?

  1. Heat the pressure cooker on high heat for 2 minutes. Use sea salt or sand as a layer inside a cooker. Put a steel stand on a layer of salt or sand.
  2. Now put the cake tin containing the cake batter ( Do not put water inside the pressure cooker).
  3. Close the pressure cooker lid and do not put the whistle on the lid. Remove the gasket (rubber ring) from the lid.
  4. Lower the flame after 2 minutes. Let it bake for 50 -60 minutes on low flame. After 60 minutes check cake with a knife, if the mixture does not stick, it means the cake is done.
  5. If batter still sticks to knife then again bake for another 10 minutes. Do not open the lid immediately.
  6. Eggless Pressure Cooker Cake is ready.

The roasted makhana namkeen made an amazing snack as they were light, crunchy and healthy. Makhanas are also known as fox nuts, or lotus seeds, or phool makhana. Usually, people consume it during their fasts or even use it as an ingredient in Indian cuisines or sweet dishes like kheer, raita or makhana cashew curry, and are also eaten as an evening tea-time snack. Many people in different regions of the country use these seeds as an offering to the Gods, especially during Navratri.

Healthy Snack

Makhana is rich in calcium, protein, carbohydrates, phosphorous, iron, thiamine and zinc. This recipe is super easy and a great nutritious snack.

Best Tea Time Snack

Ingredients :
Makhana – 1 & 1/2 cups
Ghee – 2 tsp

Spices:
Red chilli powder – 1/2 tsp
Black pepper powder – 1/2 tsp
Chat masala powder -1 tsp
Salt – to taste

Method :

  1. Add 2 tsp of ghee in a non-stick pan and add the makhana. Roast it till golden and crispy.
  2. Switch off the flame. Add all spices and toss it well.
  3. Cool down completely then store in airtight container.
  4. Enjoy with tea.
Roasted Makhana Namkeen

Whole Orange Cranberry Cake | Pressure Cooker Cake | Boiled Orange Cake | Citrus Fruit Cake

This Whole Orange Red Cranberry Cake is loaded with orange flavor and it’s perfect for brunch or dessert. It is a sweet, moist tea time cake and it’s very, very orangey. This delicious orange cake doesn’t get an orangey flavor from a little zest or from orange juice. The secret of this Orangey tasty cake is – The Whole Boiled Orange.

Orangey Flavoured Cake

When orange is boil for that long, its bitterness slips into the water. You can use the whole orange with skin and all, for a moist and delicious result.

No Oven or Pressure Cooker Cake

Ingredients:
Flour – 1 cup
( I used 50:50, Whole Wheat Flour: Maida or All Purpose Flour )
Malta Orange – 1
Dried Red Cranberry* – 1/2 cup
Dried Chopped Apricot – 1/2 cup
Powdered White Sugar – 1/2 cup
Cold milk – 1/4 cup
Refined Oil – 1/4 cup
Vanilla custard powder – 1 tbsp
Baking powder – 1/2 tsp
Baking Soda – 1/2 tsp
A pinch of salt

Method:

  1. Boil whole orange (with skin) in a pressure cooker with 2 cups of water (cook in low flame till one whistle ) or in a saucepan put 2 cups of water and orange. Boil it for 60 minutes covered in low flame.
  2. After boiling allow orange to cool down completely. Then remove its pulp and remove pith from the skin.
  3. Wet mixture: In a grinder mix sugar, oil, cold milk, boiled orange (with skin and pulp), vanilla custard powder and grind into a smooth batter.
  4. Toss soaked dried red cranberries and chopped dried apricot with 1 tbsp of whole wheat flour. Keep them aside.
  5. Dry mixture: Sieve flour, baking powder, baking soda or Eno, salt. Add tossed cherry and keep it aside.
  6. Mix tossed dried red cranberries, chopped dried apricot with dry and wet mixtures. Mix them well.
  7. Put prepared batter into a greased pan and tab the cake pan on a countertop to release any large air bubbles.
  8. Put cake pan into the preheated pressure cooker and bake it for 1 hour 10 minutes.
Boiled Orange Cake

Tips :

  • Soaked dried red cranberries in a half cup water for half an hour. Remove water and dry it completely. Then add into the flour mixture. By soaking it will slice easily.
  • For best results use orange with thin skin.
  • “Malta” orange is perfect for this cake.
  • You can use 1 cup of whole wheat flour too.
  • Don’t reduce the quality of sugar otherwise, the cake will taste bitter.
  • Baking time may vary.
  • If baking in Oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour 10 minutes. The baking time may vary. So keep checking the cake after 40 to 45 minutes.

I bake with whole-wheat flour as much as possible. It has almost four times more fiber than all-purpose flour and provides more potassium, magnesium, and zinc. Ingredients:

Whole Wheat Flour – 1 cup
Seedless & Chopped Dates – 10
Seedless Dates – 14
Milk – 3/4 cup
Banana – 1
Oil – 1/4 cup
Baking powder – 1 tsp
Baking Soda – 1/2 tsp
Sesame seeds & flax seeds – 1/4 cup each + 2 tbsp each (For topping)
A pinch of salt

Healthy Tea Time Cake

Method:

  1. Soak dates in 3/4 cup of warm milk for 20 minutes.
  2. Dry Ingredients: Sieve whole wheat flour, baking powder, baking soda with a pinch of salt. Add chopped dates, sesame seeds, flax seeds and mix them well.
  3. Wet Ingredients: Now in a grinder add soaked dates with milk (Use the same milk in which dates are soaked), banana, oil. Grind the mixture until smooth.
  4. Now mix wet ingredients with dry ingredients well.
  5. Put prepared batter into a greased square pan. Sprinkle topping (sesame and flax seeds) over batter and with help of spatula press nuts gently.
  6. Tab the pan on a countertop to release any large air bubbles.
  7. Put the pan into the preheated pressure cooker and bake it for 1 hour.
No Refined Sugar Cake

Tips:

  1. You can add 1/2 cup of brown sugar.
  2. Baking time may vary.

Quick Lunch Recipe

Ingredients:
Chickpeas – 1 cup
Spinach – 2 bunches
Finely chopped onion – 1 big
Finely chopped garlic  – 2 tbsp
Finely chopped ginger – 1 inch
Finely chopped green chili – 1
Oil – 2 tbsp
Cumin seeds- 1 tsp
Red chili powder – 1/2 tsp
Coriander powder – 1 tsp
Chana masala – 1 tsp
Dry mango powder – 1/2 tsp
Juice of one lemon
Salt to taste
Red & yellow bell pepper (finely chopped)- 1/2 cup

Indian Chickpea Spinach Curry Recipe

Method:

  1. Wash and soak chickpeas overnight. The next day, pressure cook chickpeas with 2 cups of water, salt(1/2 tsp). Keep aside to cool.
  2. Remove stems from the spinach and wash thoroughly in running water. Blanch in salted boiling water for two minutes. Now transfer boiled spinach into ice-cold water to retain the green color. Squeeze out excess water and grind it into a smooth puree (Add lemon juice while grinding).
  3. Heat oil in a pan on low flame and add cumin seeds. Allow it to crackle.
  4. Then add chopped onions and sauté on a medium flame until translucent. Now add ginger, garlic, green chili, and cook for 5 minutes on the medium-low flame.
  5. Add coriander powder, red chili powder, chana masala, dry mango powder, and cook until masala leaves oil.
  6. Add boiled chickpea and let it cook with prepared masala for 4 minutes on medium-low flame.
  7. Now add puree spinach, salt and chopped bell peppers into the cooked masala.
  8. Now add 1/2 cup water and cook on low flame for 10 minutes. Do stir the sabzi after every 1 to 2 minutes.
  9. Switch off the flame and add ghee. Stir it once. Serve hot with plain rice or paratha or chapati.
Easy, Quick & Delicious Curry

Palak Kadhi – Low Calorie Recipe | Spinach In Yogurt Based Curry | Lunch Recipe

Kadhi chawal (“yogurt curry with rice”) is a popular, rice-based dish from India. There are several variations of this food that can be found in states such as Delhi, Haryana, Uttar Pradesh, Bihar, Punjab, Rajasthan, and Gujarat. Kadhi is a blend of besan (gram flour or chickpea flour), dahi (yogurt), and spices.

This kadhi is without any pakodas (fritters), but the addition of spinach, tempered with fenugreek seeds and dry red chilis adds a beautiful flavor to your meals. It is a healthy, very light meal to be savored and enjoyed at any time of the day.

Healthy Lunch Recipe

Ingredients:
Low Fat Curd – 1 cup
Chickpea flour – 4 tbsp
Spinach – 250 gms
Chopped garlic – 4
Coriander powder – 1 tsp
Red chilli powder – 1 tsp
Fenugreek seeds – 1/2 tsp
Dry red chilli – 2
Oil – 1 tbsp
Water – 2 or 3 cups
Salt to taste

Spinach In Yogurt Based Curry

Method:

  1. Yogurt spinach mixture: In a blender add yogurt, chickpea flour, spinach, garlic, red chili powder, coriander powder, salt with 1 cup of water in a grinder. Pulse twice to combine and keep it aside.
  2. Heat 1 tbsp of oil in a kadai. Add fenugreek seeds and dry red chilli. Saute for few seconds.
  3. Now add yogurt spinach mixture and remaining 1 & 1/2 cups of water. Mix them well.
  4. Cook for 20 minutes on low flame till it becomes little thick and creamy.
  5. Serve hot with plain steamed rice.
