No Sugar No Egg No All Purpose Flour No Butter And No Oven Baked
Ingredients: Oats flour โ 1 cup Whole wheat flour โ 1/2 cup Cocoa powder โ 1/4 cup Dates & Prunes – 10 each ( Dates deseeded) Room temperature milk โ 3/4 cup Oil โ 1/4 cup Baking powder โ 1 tsp Baking soda โ 1/2 tsp A pinch of Himalayan pink salt
Sieve dry Ingredients: Mix oats flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt and keep it aside.
Wet Ingredients: Now add milk, dates & prunes, oil, to mixer and blend until smooth.
Now mix wet ingredients with dry ingredients well.
Put half prepared batter into a greased square pan. Sprinkle nuts mix over batter.
Put remaining batter and sprinkle nuts over it and with help of spatula press nuts gently.
Tab the pan on a countertop to release any large air bubbles.
Put the pan into the preheated kadai (wok) and bake it for 1 hour 15 minutes.
When brownie is done, allow to cool for 10 minutes.
Remove bread from the pan and set them on a rack set over a tray or sheet pan.
Allow brownie to cool completely before slicing and enjoy.

HOW TO BAKE THE CAKE IN KADAI (WOK)
In a heavy bottom kadai add a cup of salt or sand. Place a steel stand in a wok. Cover and preheat the kadai on high heat for about 8 minutes. (Adding salt at the bottom ensures that the kadai doesnโt burn. Heavy bottom kadai acts as oven and ensures even cooking from all sides). I never used salt in my baking because I use a heavy bottom kadai (Prestige Brand) and I am baking for the past 2 years in the same kadai. It works perfectly fine. But, it depends on the brand, quality of the kadai.
After 8 minutes, lower the heat and put baking tin in a kadai. Cover a lid and bake bread for 60 minutes. After 60 minutes check cake with a knife, if the mixture does not stick, it means the bread is done. If batter still sticks to knife then again bread for another 10 minutes.

Microwave Method | No Sugar Treat
Just spread nuts and seeds on a microwave-safe plate and in an even layer. The trick also works for coconut powder, sesame seeds, or another seeds of your choice. Then cooks the nuts on full power for three minutes. Every minute, pauses the process to mix up the nuts so that they toast evenly.

Ingredients: Dates, Seedless – 2 cups Dried red cranberries – 1 cup Almonds – 1/4 cup Cashews – 1/4 cup Pistachios – 1/4 cup Pecans – 1/4 cup Coconut powder – 1/4 cup Sesame Seeds – 1/4 cup Flax seeds – 2 tbsp Green cardamom powder – 1 tsp A pinch of salt
Dates & Dried Red Cranberries
Method:
Spread them (Almonds, Cashews, Pistachios, Pecans, Coconut powder, Sesame Seeds, Flax seeds) onto a microwave-safe plate in an even layer.
Microwave them on high power for 7 minutes. Check them every 60 seconds to make sure that they donโt get burned.
Then allow roasted nuts and seeds to cool down completely then transfer to a dry grinder along with dates and dried red cranberries.
Take out the grounded dates nuts mixture and roll it out into a cylindrical shape by pressing with both the hands.
Now take an aluminum foil sheet or cling film and place a rolled burfi on it. Spread some sprinkles on foil and wrap up nicely. Place it in a refrigerator for 2 hours.
After 2 hours, unwrap the rolled burfi and cut them into ยฝ cm thick burfi. Keep in an airtight container.

Dry Ingredients: Sieve whole wheat flour, baking powder, baking soda with a pinch of salt. Add chopped dates, sesame seeds, flax seeds and mix them well.
Wet Ingredients: Now in a grinder add soaked dates with milk (Use the same milk in which dates are soaked), banana, oil. Grind the mixture until smooth.
Now mix wet ingredients with dry ingredients well.
Put prepared batter into a greased square pan. Sprinkle topping (sesame and flax seeds) over batter and with help of spatula press nuts gently.
Tab the pan on a countertop to release any large air bubbles.
Put the pan into the preheated pressure cooker and bake it for 1 hour.

Pressure Cooker Method: Grease the baking tin with oil and dust it by sprinkling whole wheat flour over greased surface evenly. Pour the mixture into the greased baking tin.

Use a 5-liter pressure cooker. It should be big enough to hold the baking pan.

Type of flours I used in this cake: In this, I used three types of flour – Whole wheat spelled flake flour, Old fashioned oats flour, and Quick-cooking oats flour. I roasted Whole wheat spelled flakes, Old fashioned oats, Quick-cooking oats separately, and grain them into fine flour.
Three Flours
Whole wheat spelled flakes: These spelled flakes consist of fully organic spelled granules. The whole grains are cold crushed into flakes and remain free of additives. Thanks to the many proteins, spelled flakes are particularly nutritious. In fact, they contain more protein than wheat. In addition, they are easy to digest. You can eat these steamed flakes.
Whole wheat spelled flakes
Old fashioned oats : These like flat, irregularly round, slightly textured discs. When processed, the whole grains of oats are first steamed to make them soft and pliable, then pressed to flatten them. Rolled oats cook faster than steel-cut oats, absorb more liquid, and hold their shape relatively well during cooking. In addition, to be heated for a warm breakfast bowl, rolled oats are commonly used in granola bars, cookies, muffins, and other baked goods.
Old fashioned oats
Quick-cooking oats : Quick oats or quick-cooking oats are rolled oats that go through further processing to decrease cooking time. Theyโre partially cooked by steaming and then rolled even thinner than old-fashioned oats. They cook within a few minutes, have a mild flavor and soft, mushy texture.
Quick-cooking oats

Mix dry fruits & seeds – Roasted almonds, pecans, pistachios, raisins, dried red cranberries, roasted sunflower seeds, dried apricots, sesame seeds (Any other nuts and seeds of your choice)
For topping : Coconut flakes and sesame seeds – 3 tbsp each
Method :

Toss 2 tsp of oat flour with mix dry fruits and nuts. Keep it aside.
Dry Ingredients: Mix all three flours, baking soda, baking powder, salt with tossed dry fruits and nuts. Keep it aside.
Now in a grinder add soaked dates and prunes with milk (Use the same milk in which dates are soaked), oil. Grind the mixture until smooth.
Now mix wet ingredients with dry ingredients well.
Put prepared batter into a greased square pan. Sprinkle topping over batter and with help of spatula press nuts gently.

By adding jaggery this chutney becomes healthier.ย The benefits of jaggery include its ability to cleanse your body, sweeten your food inย a healthy manner, and provide good amounts of minerals. This chutney can be stored in a refrigerated for up to 6 months.
Jaggery or Gur
Dates & Jaggery
Ingredients : Dates – 1 cup Grated Jaggery – 1 cup Roasted pumpkin and melon seeds – 1/4 cup
Spices: Amchur powder – 1 tsp Roasted cumin powder – 1 tsp Garam masala – 1/2 tsp Black pepper powder – 1/2 tsp Red chili powder – 1/2 tsp Roasted fennel powder – 1/4 tsp Black salt – 1/2 tsp Salt – 1/2 tsp
Jar Of Goodness
Method :
Wash and soak dates in a 1 cup of warm water for 30 minutes. Then remove seeds and grind dates (use same water in which dates are soaked) into a smooth puree.
In a nonstick pan add grated jaggery with dates puree and mix till jaggery is completely dissolved.
Then add all spices and mix gently.
Cook the chutney on low flame till to right and little thick consistency on low flame.
Switch off the gas and add roasted pumpkin seeds, melon seeds. Mix them well.
Keep aside prepared chutney to cool down completely and then store in a glass jar.
Khajur Gur Ki Chutney
Tips :
This stays good in the fridge for 6 months.
You can have the consistency of the sweet chutney as per your choice. Simply alter the amount of water and make the chutney thin or thick as per your requirements.
Adjust the amount of jaggery according to your taste.
Donโt overcook chutney. It will be thick when cools down.

Now put the cake tin containing the cake batter ( Do not put water inside the pressure cooker).
Close the pressure cooker lid and do not put the whistle on the lid. Remove the gasket (rubber ring) from the lid.
Lower the flame after 8 minutes. Let it bake for 50 -60 minutes on low flame. After 60 minutes check cake with a knife, if the mixture does not stick, it means the cake is done.
If batter still sticks to knife then again bake for another 10 minutes. Do not open the lid immediately.
This sweet and sour chutney made with tart green grapes, black grapes, jaggery ( Gur), dates with some spices. This chutney has loads of goodness of dates and jaggery. As we know they bothย are super healthy.

Grapes Dates Chutney – No Sugar Spread
Ingredients :
Chopped Grapes โ 250 gms (Mix Green and Black Grapes)
Chopped Dates – 3/4 cup
Jaggery – 1/2 cup
Spices:
Roasted cumin seeds โ 1 tsp
Black pepper powder โ 1/2 tsp
Red chili powder โ 1/2 tsp
Black salt โ 1/2 tsp
Method:
Put all chopped grapes with 1/2 cup of water in a deep saucepan. Cook for 5 minutesย on a medium-low flame.
Now add chopped dates, jaggery along with all spices and cook chutney on low flame till to right and little thick consistency.
Keep aside to cool. Grind it into a smooth paste and store in a glass jar.
Holi is coming, everyone is busy making “Gujiya”, the popularย Holi sweet. Gujia is a sweet dumpling made with Maida and stuffed with Mawa, Rava, and Dry fruits. Making Gujiya is veryย time-consuming but without it Holi is incomplete. Today I am sharing an easyย recipe to make Gujiyaย stuffing which takes less time and it has no sugar. All sweetness comes from dates, dried apricot, raisins, and jaggery.
No Sugar Gujiya Filling
It is quick because there is no need to chop dry fruits (which is a time-consuming task). Just roast them and mix with other roasted ingredients (Mawa, Coconut, Rava ). Grind all roasted ingredients in a grinder and its ready to use.

No Sugar Filling For Gujiya – Healthy & Quick
Ingredients: Homemade Mawa – 1 cup Rava or Sooji – 1/2 cup
Dry Grated Coconut – 1/2 cup
Dry fruits – 1 cup ( Walnuts, Pistachios, Almonds, Raisins, Cashews)
Chopped Dates – 1/2 cup
Choppedย Dried Apricots – 1/2 cup
Grated Jaggery – 1/2 cup
Fennel seeds – 2 tbsp Cardamon powder – 2 tbsp
Butter or Ghee – 2 tbsp
Salt a pinch
Method:
Heat a non-stick heavy pan and roast dry grated coconut for 5 minutes on a very low flame stirring continuously.
Transfer roasted coconut in a bowl and keep it aside.
Heat 1 tbsp of ghee in the same pan and add all whole dry fruits. Roast them for 2-5 minutes on low flame stirring continuously. Switch off the flame and transfer to another bowl. Allow them to cool down completely.
Now heat 1 tbsp ghee in the same pan and add Mawa. Roast for 3 minutes on a very low flame.
Add rava and roast until mixture turns into light brown in color. Take out on a plate and allow to cool down completely.
Take a big bowl mix roasted Mawa Rava mixture, coconut, dry fruits, chopped dates, and apricots.
Add grated jaggery, cardamom powder, fennel seeds with a pinch of salt. Mix them nicely.
Put prepared mixture in a grinder and grind it into a coarse powder.
Gujiya filling is ready to use.

Tips:
Allow to cool down roasted ingredients completelyย before mixing them.
You can replace jaggery with powdered white sugar or powdered brownย sugar.
