Sweet Potato with Fenugreek Leaves (Methi Sakarakandi Sabzi)

The Sweet Potato with Fenugreek Leaves is a nutritious combination of two superfoods. Sweet potato is a good substitute for potatoes. They are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus. Whereas, Fenugreek is used to improve metabolism in addition to using it to regulate blood sugar levels.

Nutritious Recipe

Ingredients:
Fenugreek Leaves – 250 gms
Sweet potato – 3 medium size
Finely chopped garlic – 4
Finely chopped green chilly – 2
Mustard oil – 1 tbsp
Cumin – 1 tsp
Juice of 1/2 lemon

Spices:
Kitchen King Masala – 1 tsp
Turmeric – 1/2 tsp
Coriander powder – 1 tsp
Salt to taste

Pomegranate for garnishing – 1/4 cup

Method:

  1. Boil one cup of water and add chopped methi leaves with little salt. Boil water for 10 minutes on a medium-high flame.
  2. After 10 minutes switch off the gas and drain the water. Keep boiled methi leaves in a colander and keep it aside.
  3. Peel the sweet potatoes and cut them into cubes. Boil 1 cup of water in a pan and add sweet potato cubes and cook for 8 minutes on high flame. After 8 minutes strain potato and keep them aside. (Do not overcook the sweet potatoes)
  4. Heat the mustard oil in a deep non-stick pan, add the cumin seeds and when the seeds crackle, add the garlic, chopped green chilies. Saute on a medium flame for 30 seconds.
  5. Add all spices and boiled sweet potatoes. Mix gently and cook on a medium flame for 5 minutes while stirring occasionally.
  6. Now add boiled and chopped fenugreek leaves. Mix well and cooks on a medium flame for 5 minutes while stirring occasionally.
  7. Switch off the flame and add lemon juice. Mix them well.
  8. Garnish with Pomegranate and serve hot with chapati or paratha.

Sooji Gur Ka Halwa (Semolina Jaggery Pudding) – Healthy Dessert – No Sugar Dessert

Sooji Gur Ka Halwa is a delicious sweet dish made with ghee, sooji or semolina, jaggery flavored with fennel seeds and lots of dry fruits. It is a traditional North Indian dish, it is mostly prepared during Winters, as jaggery and ghee lend warmth to the body.

Sooji Gur Ka Halwa (Semolina Jaggery Pudding) – Healthy Dessert

Ingredients:
Sooji or Semolina – 1 cup
Grated Jaggery – 3/4 cup
Water – 2 cups
Ghee – 5 tbsp + 1 tbsp + 1 tsp
Fennel seeds – 2 tbsp
Cardamom powder – 1/2 tsp
A pinch of salt
Chopped dry fruits – 1/2 cup

Sooji Gur Halwa

Method :

  1. Heat 1 tsp of ghee in a deep non-stick kadai. Roast all chopped dry for a minute and keep them aside.
  2. Heat 5 tbsp of ghee in a deep non-stick kadai and roast sooji till the color turns brown.
  3. Boil water in another pan and add jaggery, a pinch of salt. Boil water until jaggery dissolves completely.
  4. Sieve the boiled jaggery water and add in the roasted sooji. Mix it quickly and make sure there are no lumps.
  5. Cook for another minute on low flame, stirring continuously.
  6. Keep on stirring until the whole mixture starts thickening and starts to leave the edge of the kadai.
  7. Add fennel seeds, cardamom powder, remaining 1 tbsp of ghee and mix well.
  8. Garnish with chopped dry fruits and serve hot.
