Raksha Bandhan is here. A festival for celebrating the love between siblings. The common tradition associated with this occasion is the sister tying Rakhi on her brother’s hand and the brother on his part gifts his beloved sister something precious. Sister usually likes to prepare sweets, especially for this occasion a night before the celebration. 

Raksha Bandhan Special

Loaded with M&M and delicious chocolate brownie is a perfect way to celebrate Raksha Bandhan. Perfectly crunchy and flaky on the top and with a soft and chewy center, these M&M Brownies are easy to make. This chocolate brownie is not only egg-free but also contains no all-purpose flour or maida and uses oil instead of butter. The best part about this brownie is how moist it is. The Oats make this brownie soft and flavorful. I used whole wheat flour instead of maida or all-purpose flour to give it more nutritional value.

Oats are commonly eaten for breakfast as oatmeal, which is made by boiling oats in water or milk. Oatmeal is often referred to as porridge. Oats are loaded with dietary fiber and have a range of healthy cholesterol-lowering properties. Oats are hailed as one of the easiest to use ingredients. I already shared how to make homemade oats flour with quick-cooking oats. I used oat flour in baking, dosa, in making sabzi or curry as well. Give a try to this chocolate cake.

Baking with Oats

Ingredients:

Wheat wheat flour – 1 cup

Homemade oats flour – 1/2 cup

Brown sugar – 1/2 cup

Cocoa powder – 1/4 cup

Baking soda – 1 tsp

Oil – 1/4 cup

Greek yogurt – 1 cup

M&M – 3/4 cup

Chocolate sprinkles – 1/4 cup

Method:

  1. Dry ingredients : Shift whole wheat flour, oats flour, cocoa powder, baking soda. Keep it aside.
  2. Wet ingredients: In a grinder add brown sugar, curd, oil, mix until smooth.
  3. Mix both dry and wet mixtures together.
  4. Put prepared batter into a greased square pan. Tab the pan on a countertop to release any large air bubbles.
  5. Add sprinkle M&M and chocolate sprinkles over batter and with help of spatula press them gently.
  6. Put the pan into the preheated wok and bake it for 1 hour.
  7. When the cake is done, allow to cool for 10 minutes. Remove the cake from the pan and set them on a rack set over a tray or sheet pan.
  8. Allow the cake to cool completely before slicing and enjoy.
Baked In Wok (Kadai)

Tips:

  • Baking time may vary.
  • Brown sugar can be replaced by white sugar.
  • If cake batter looks dry, add 2- 4 tbsp of milk.
  • If baking in Oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour. The baking time may vary. So keep checking the cake after 40 to 45 minutes.
No Oven Brownie
HOW TO BAKE THE CAKE IN KADAI (WOK)

In a heavy bottom kadai add a cup of salt or sand. Place a steel stand in a wok. Cover and preheat the kadai on high heat for about 8 minutes. (Adding salt at the bottom ensures that the kadai doesn’t burn. Heavy bottom kadai acts as oven and ensures even cooking from all sides). I never used salt in my baking because I use a heavy bottom kadai (Prestige Brand) and I am baking for the past 2 years in the same kadai. It works perfectly fine. But, it depends on the brand, quality of the kadai.

Wok Brownie

After 8 minutes, lower the heat and put baking tin in a kadai. Cover a lid and bake bread for 60 minutes. After 60 minutes check cake with a knife, if the mixture does not stick, it means the bread is done. If batter still sticks to knife then again bread for another 10 minutes.

Tofu Spinach With Quaker Oats | Spinach Based Curry | Recipe with Oats | Protein Rich Recipe

Palak Paneer is a vegetarian dish from the Indian subcontinent, made with paneer or cottage cheese in a thick paste made with pureed spinach and seasoned with ginger, garlic, and other spices. This Tofu Spinach Recipe is exactly the same, the only difference is that I have swapped the paneer or cottage cheese with tofu.

Ingredients:
Tofu – 200 gms
Spinach – 1 bunch
Finely chopped onion – 1 big
Finely chopped tomato – 2 big
Finely chopped garlic  – 3 tbsp
Finely chopped ginger – 2 tbsp
Finely chopped green chili – 1
Homemade Oats Flour – 3 tbsp
Oil – 2 tbsp
Cumin – 1 tsp
Red chili powder – 1/2 tsp
Pinch of turmeric powder
Coriander powder – 2 tbsp
Chaat masala – 1 tbsp
Himalayan pink salt to taste

Spinach Based Curry

Method:

  1. Remove stems from the spinach and wash thoroughly in running water. Blanch in boiling water for two minutes. Now transfer boiled spinach into ice-cold water to retain the green color. Squeeze out excess water and grind it into a smooth puree.
  2. Heat oil in the same pan on low flame and add cumin. Allow it to crackle.
  3. Add ginger, garlic and cook for 5 minutes on the medium-low flame. Then add chopped onions, chopped green chilly, salt and a pinch of turmeric powder. Sauté on a medium flame until translucent.
  4. Lower the heat and add coriander powder, red chili powder, chaat masala with little water and cook until masala for 5 minutes.
  5. Now switch off the gas and allow masala to cool down. Grind cooked masala into a fine paste and transfer grounded masala into the same pan.
  6. Add tofu cubes and mix gently. Cover and let it cook for minutes on low heat.
  7. Mix 2 tbsp of oats flour with 1/4 cup of water. Make a smooth paste.
  8. Now add puree spinach with oats flour paste. Mix well and let it cook for 8 minutes on low heat.
  9. Switch off the heat and serve with rice or paratha.

Oats Whole Wheat Banana Bread | Baking in Kadai (Wok) | Best Use of Overripe Bananas

Got a ripe banana or two sitting around? You’re in luck. Ripe and overripe bananas are a superhero. Because overripe bananas provide plenty of sweetness, you can get by with adding much less sugar.

Wholesome Bread

This bread is super moist made with whole wheat flour, oats flour, ripe bananas, mix with healthy chopped pecans, walnuts, dried red cranberries and topping with sesame, and flax seeds in every bite. The darker, softer, and blacker the better. Super-ripe bananas are easier to mash so you can get a nice uniform texture. The banana puree blends in with the other ingredients and bakes a perfect bread.

Baked In Kadai

I bake with whole-wheat flour as much as possible. It has almost four times more fiber than all-purpose flour and provides more potassium, magnesium, and zinc. Baking is a science-not all baked goods are ideal candidates for whole-wheat, but if you experiment, you’ll find many recipes just as delicious with whole-wheat flour. I have been baking from the last 10 years with whole wheat flour. Each time results are awesome and delicious.

Oats Whole Wheat Banana Bread | Baking in Kadai (Wok) | Best Use of Overripe Bananas

So next time, don’t even think about tossing out those overripe bananas. Just bake this wholesome banana bread and enjoy in breakfast or lunch or with evening tea.

Ingredients :
Ripe Bananas – 3 (medium size)
Whole Wheat Flour – 1 cup
Oats Flour – 1/2 cup
Refined Oil – 1/4 cup
Brown sugar – 1/4 cup
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Cinnamon powder – 1/2 tsp
Chopped walnuts & pecans, dried cranberries (1/4 cup each)
Sesame , flax seeds, chopped walnuts & pecans, dried red cranberries (3 tbsp each) for toppings
A pinch of Himalayan pink salt

Healthy Wholesome Slice

Method :

  1. Grease baking pan with little oil and flour OR line baking tin with butter paper.
  2. Dry Ingredients – Sieve whole wheat flour, oats flour, baking soda, baking powder, himalayan pink salt directly in the bowl. Add cinnamon powder and mix it well. Keep it aside.
  3. Wet Ingredients – In a mixer add bananas, brown sugar, oil and grind it into a smooth paste.
  4. Now mix chopped walnuts, pecans and dried cranberries with dry ingredients.
  5. Now mix wet and dry ingredients. Put the prepared batter into a greased pan. Sprinkle topping over batter and with help of spatula or spoon press nuts gently.
  6. Tab the pan on a countertop to release any large air bubbles.
  7. Put the pan into the preheated kadai (wok) and bake it for 1 hour.
  8. When bread is done, allow to cool for 10 minutes. Remove bread from the pan and set them on a rack set over a tray or sheet pan.
  9. Allow bread to cool completely before slicing and enjoy.

I love it when my house is filled with the scent of something baking. Weekends are the perfect time to create a new recipe, and maybe even make something that you can enjoy throughout the week ahead. These super healthy, moist, and tasty Oats Chocolate Brownies are perfect for weekend baking. These brownies are not only egg-free but also contain absolutely no whole wheat or all-purpose flour and I used oil instead of butter.

The best part about this chocolate brownie – it is super moist and oats make them super healthy. In this brownie, I used two types of oats – Old Fashioned Oats and Quick Cooking Oats to give it more nutritional value. Topping with choco chips, coconut flakes, roasted melon seeds, pumpkin seeds, and flaxseeds gives a perfect crunch.

What is the difference between old-fashioned oats and quick-cookingSteel-cut or old fashioned oats have a coarser, chewier texture and nuttier flavor than rolled or quick oats. They also take longer to prepare, with average cooking times varying 15–30 minutes.

Old Fashioned Oats

Quick oats or quick-cooking oats are rolled oats that go through further processing to decrease cooking time. They’re partially cooked by steaming and then rolled even thinner than old-fashioned oats. They cook within a few minutes, have a mild flavor and soft, mushy texture.

Quick Cooking Oats

Both have been flattened with large rollers, but quick-cooking oats are cut into smaller pieces first. As a result, quick-cooking oats cook faster, and they offer a more delicate texture to baked goods and desserts. If you want a heartier texture, use old-fashioned oats because it has more fiber than quick-cooking oats.

Super moist brownies

These brownies are extra-moist and super tasty. It’s uniquely delicious and most people haven’t tried it before and chocolate lovers do try this. I think the best part is the topping that adds a sweet crunch that pairs so well with these extra moist brownies.

Oats Chocolate Brownies | Eggless Butterless Chocolate Treat | Healthy Chocolate Treat

I try to add oats to pretty much everything – dosa ,uttapam, idli, chilla or cookies. Then why not in baking ?. These brownies are simple to make and have all the qualities you want in a brownie. They’re rich, fudgy, moist, chocolatey, and delicious too.

Ingredients:
Old fashioned oats flour – 1 cup
Quick cooking oats – 1/2 cup
Cocoa powder – 1/4 cup
Brown sugar – 3/4 cup
Greek yogurt – 3/4 cup
Oil – 1/4 cup
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Choco chips – 1/4 cup
A pinch of salt

Nuts Mix:
The mix of roasted sunflower seeds, flaxseeds, white chocolate chips, chocolate chips, coconut flakes – 1/2 cup ( 2 tbsp each)

Method :

  1. For oats flour, add steel cut oats (1 & 1/4 cups) and quick cooking oats to a mixer and blend until fine powder.
  2. Dry Ingredients: Mix oats flour, cocoa powder, baking soda, baking powder, salt and keep it aside.
  3. Wet Ingredients: Now add greek yogurt, brown sugar, oil, to mixer and blend until smooth.
  4. Now mix wet ingredients with dry ingredients well.
  5. Put prepared batter into a greased square pan. Sprinkle nuts mix over batter and with help of spatula press nuts gently.
  6. Tab the pan on a countertop to release any large air bubbles.
  7. Put pan into the preheated pressure cooker and bake it for 1 hour.

  1. Don’t demould quickly allow it to cool down completely.
  2. Cover brownie with kitchen towel for half an hour before slicing.
  3. Adjust sugar according to your taste.
  4. Baking time may vary.
  5. If prepared batter looks dry, add 2- 4 tbsp of milk.
  6. If baking in Oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour. The baking time may vary. So keep checking after 40 to 45 minutes.

Pressure Cooker Method:
Grease the baking tin with oil and dust it by sprinkling whole wheat flour over greased surface evenly. Pour the mixture into the greased baking tin.

Important Notes:

  • Use the baking tin of 6 inches in diameter, so that it can easily get into the pressure cooker.
  • Use a 5-liter pressure cooker. It should be big enough to hold the baking pan.
  • Baking Tin should be made of Aluminium.
  • If baking tin comes into direct contact with the base of the pressure cooker, it can burn ( overbake ) the cake. So use pressure cooker container which has big holes in it or any aluminum small stand.
  • No gasket and whistle are needed. Remove them before baking.
  • Don’t add water to the pressure cooker.

How to Bake In A Pressure Cooker?

  1. Heat the pressure cooker on high heat for 2 minutes. Use sea salt or sand as a layer inside a cooker. Put a steel stand on a layer of salt or sand.
  2. Now put the cake tin containing the cake batter ( Do not put water inside the pressure cooker).
  3. Close the pressure cooker lid and do not put the whistle on the lid. Remove the gasket (rubber ring) from the lid.
  4. Lower the flame after 2 minutes. Let it bake for 50 -60 minutes on low flame. After 60 minutes check cake with a knife, if the mixture does not stick, it means the cake is done.
  5. If batter still sticks to knife then again bake for another 10 minutes. Do not open the lid immediately.
  6. Eggless Pressure Cooker Cake is ready.

Ingredients:
Apple – 1 (Peeled and cubed)
Banana – 1
Cinnamon powder – 1/2 tsp
Oats – 1/2 cup
Water – 3/4 cup
Skimmed milk – 1/2 cup
Chopped walnuts – 1/4 cup

Method:

  1. Heat a 3/4 cup of water in a nonstick saucepan and add oats. Cook oats for 6 minutes on medium low flame stirring continuously.
  2. When oats are cooked switch off the flame. Let it cool down completely before grinding.
  3. Now blend cooked oats, banana, apple with milk together in a mixer till smooth.
  4. Pour smoothie into a glass, garnish with cinnamon powder and chopped walnuts.

Old fashioned oats are rolled whole-grain oat kernels. In quick cooking oats, on the other hand, the oat kernel is first cut into smaller pieces before being rolled. This makes it much easier for quick oats to absorb water than an old fashioned oat. You can visibly see the size difference.

How to make Homemade Oats Flour :

Oat flour is the simplest flour to make at home, quick cooking or old fashioned oats and your high speed blender or food processor. Its done !!!!

You will need –

Oats – 1 cup ( Old Fashioned Oats, Quick Cooking Oats. You can choose any one)

Grinding Oats

Method :

  1. To make a oats flour, dry roast the oats on a slow flame till it turns crisp for 2 minutes. The oat flakes are toasted to remove moisture and make the oats shelf stable.
  2. Stir frequently and avoid burning the oats as it can give a very off taste.
  3. Transfer roasted oats to another plate and let it cool completely.
  4. Now blend in a grinder into a fine powder.
Oats Flour Ready

How to store Oats Flour?
Keep it in a cool, dry place in an airtight container. Oats flour lasts for about 4 months in the cabinet and 6 months in the refrigerator.

Mango Smoothie With A Healthy Twist | Breakfast Bowl Recipe | Mango Oats Smoothie

A creamy delicious and healthy bowl of Mango Oats Smoothie is a perfect way to start your day. Smoothie bowls are very easy to make, just throw all the ingredients in blender and blend – It’s Ready Besides their sweet, delicious taste mangoes also have many advantages and health benefits. Mangoes are a very good source of fiber. Mangoes also contain many minerals in them; most notably potassium and magnesium. Ingredients:
Mangoes – 1 (Peeled and cubed)
Oats – 1/2 cup
Cold Milk – 1/2 cup
Water – 3/4 cup
Fresh fruits – 1/2 cup ( Mango cubes. sliced cherries) Any fruits of your choice
Sliced Pistachios – 1/4 cup

Method:

  1. Heat a 3/4 cup of water in a nonstick saucepan and add oats. Cook oats for 6 minutes on medium low flame stirring continuously.
  2. When oats are cooked switch off the flame. Let it cool down completely before grinding.
  3. Soaked 10 pistachios (without shells) in a 1/2 cup of water for 10 minutes. After 10 minutes drain the water and slice them. Keep them aside.
  4. Now blend cooked oats, mangoes with cold milk together in a mixer till smooth.
  5. Pour into a big bowl, garnish with chopped mangoes, cherries and sliced pistachios.

Tips:

  • You could even make oats in advance and use accordingly.
  • You can substitute mangoes with any seasonal fruit.

Finely chopped green chilies – 2
Chaat masala – 2 tsp
Red chili powder – 1 tsp
Turmeric powder – 1/4 tsp
Garam masala powder – 1/4 tsp

Roasted and crushed peanuts – 1/4 cup
Oil for shallow frying

For Serving :
Green Raw Mango Coriander Chutney – 1 cup
Amchur Chutney – 1 cup
Pomegranate Pearls – 1 cup

Method :

  1. Dry roast the oats on a slow flame till it turns crisp. Let it cool completely.
  2. Wash and soak moong dal in 4 cups of water for 4 hours or overnight.
  3. Drain and cook soaked moong daal with about 2 cups water on medium-low heat in a deep saucepan until all the water has evaporated.
  4. Allow cooked daal to cool down completely.
  5. Mix cooked moong daal, roasted oats, and other tikki ingredients (except oil ) to make a soft dough. Keep it in the refrigerator for 30 minutes.
  6. Now apply little water on your hands. Take some lemon size portion and make cutlets.
  7. Heat little oil in pan and place cutlets in a pan.
  8. Shallow fry till both sides are golden brown and crisp.
  9. Serve hot with chutneys and pomegranate pearls.

Healthy Snack

Ingredients :
Whole Green Dal Sprouts – 1 cup
Roasted Oats – 1 cup
Finely chopped onion – 1 medium
Finely chopped garlic- 2
Finely chopped coriander leaves – 1/4 cup
Finely chopped green chilly – 1
Turmeric – 1/4 tsp
Coriander powder – 1/2 tsp
Sabzi masala or pav bhaji masala – 1/2 tsp
Crushed Roasted Peanuts – 3 tbsp
Salt to taste

Oil for shallow frying

For Serving :
Thick curd – 1 cup
Chaat masala – 2 tbsp
Green Chutney or Sauce – 1/2 cup

Method :

  6. Shallow fry till both sides are golden brown and crisp.

Roti is the simplest bread that is made every day in Indian households. It is made with only 2 ingredients- atta (the wheat flour) and water. Earlier I shared 100% roti recipe made with oats flour. For that, I replace whole wheat flour with oats flour which makes roti even more healthy.

This time I added spinach and made delicious green roti. These Spinach flatbreads or rotis are a perfect start to any morning. You can have this healthy flatbread in breakfast with chutney, or lunch with dal or in dinner with sabzi.

If you are bored of eating bland oats porridge give this oats chapati or roti a try. It tastes just like our regular chapati. The roti may look hard while cooking but it softens after some time (keep prepared roti in a hot case). The addition of spinach makes this roti is a very healthy, nutritious dish and one of the best ways of eating the greens.

Iron Rich Roti

Ingredients :
Oats Flour – 1 cup
Spinach – 200 gms or 1 bunch
Water – 1 cup
Oil – 1/2 tsp
Sesame seeds – 1/4 cup
A pinch of salt

Roti with Oats Flour

Method :

  1. Remove stems from the spinach and wash thoroughly in running water. Blanch in salted boiling water for two minutes. Now transfer boiled spinach into ice-cold water to retain the green color. Squeeze out excess water and grind it into a smooth puree (1 cup of water). Spinach puree is ready.
  2. Now heat Spinach puree in a pan with oil and salt. Once the water starts boiling switch off the flame. Combine the oat flour and water. Mix thoroughly with a spoon. Transfer dough in a bowl. Let it rest for 15 minutes (covered).
  3. After 15 minutes knead the dough for 2- 3 minutes. Heat the nonstick pan/skillet on medium-high flame.
  4. Make a small lemon size ball and dust some oats flour over a rolling board.
  5. Place the oats dough and roll out to a thin roti as possible. Sprinkle few sesame seeds and roll out again.
  6. Now place a lid over the rolled roti to make a perfect shape and remove the extra dough ( I used pressure cooker stand).
  7. This is because oats are gluten-free and it is difficult to get a perfect shape.
  8. Place the roti on a hot pan, cook both sides till done. Serve super healthy roti with your favorite sabzi.
