Wood Apple Jaggery Chutney (No Sugar) | Summer Special Recipe

Think summer and the most popular fruits that come to mind includes – Mangoes, Melons, and Wood Apple. Wood Apple popularly known as bael in the Northern part of India, Wood apple gives you a boost of energy in summers. The high protein content of the fruit also boosts the healing power of your body. I shared some recipes with Woodapple – Woodapple JamWoodapple Summer DrinkWhole Wheat Woodapple Cake, and Spicy Woodapple Chutney made with sugar. Today I am sharing wood apple chutney with jaggery or gur. By adding jaggery this chutney becomes healthier.

Healthy Chutney

 The benefits of jaggery include its ability to cleanse your body, sweeten your food in a healthy manner, and provide good amounts of minerals. This sugar free chutney is spicy and sweet chutney made with wood apple or bael, jaggery, and mix spices. It goes well parathas or with any chaat.

Woodapple Chutney With Jaggery

Wood Apple Jaggery Chutney

Ingredients:
Woodapple – 1 medium
Grated jaggery or gur – 1 cup

Spices:
Black Salt – 1 tsp
Roasted cumin seeds- 1 tsp
Black pepper powder – 1 tsp
Fennel seeds – 1/4 tsp
Red chili powder – 1/2 tsp
Salt to taste

Method :

  1. Break open the fruit and using a spoon scoop the pulp. Put woodapple pulp with 1 cup of water in a bowl and keep it aside for 30 minutes.
  2. After 30 minutes using your palms gather. Squish the pulp to separate the seeds and juice the pulp. Press the juice through a sieve to strain the fibers and seeds from the thick pulp.
  3. Add strained wood apple pulp in a nonstick pan and cook for 10 minutes on low flame.
  4. Add jaggery with all spices and cook for another 10 minutes on low flame. Once chutney starts to thickens switch off the flame.
  5. Allow chutney to cool down. Then add lemon juice and mix well.
Bael Chutney

Tips :

  • Lift chutney with a spatula and pour chutney, it should flow together and not in drops.
  • Pour few drops of prepared chutney on a plate if it spreads then it’s not ready if it stays firm without moving then the chutney is ready.
  • Allow to cool and store in sterilized glass jar.
  • Keep chutney in the refrigerator after every use. Use a clean and dry spoon. It last long for 3 months.

Sunshine Summer Spread | Wood apple or Bael Jam | Yummy Summer Treat

Wood apple, also known as “bael” in India, has loads of health benefits. Bael fruit has other names like wood apple, elephant apple, and monkey fruit. Its sweet pulp is filled with nutritious benefits. You can make wood apple juice, wood apple chutney and also wood apple jam. Wood apple jam is very easy and with very few ingredients delicious jam is ready.

Woodapple Jam

Ingredients :
Wood Apple – 1 medium
Sugar – 3/4 cup
Juice of one lemon

Sunshine Summer Spread

Method :

  1. Break open the fruit and using a spoon scoop the pulp. Put wood apple pulp with 1 cup of water in a bowl and keep it aside for 30 minutes.

Mother’s Day Special | Rooh Afza Beetroot Cake Baked In Pressure Cooker | Recipe With Rooh Afza

Mother’s Day is right around the corner. Make your mum’s day more special with this flavorful Rooh Afza Beetroot Cake. Nothing speaks love more than homemade baked goods.

This cake is super rich, flavorful and moist. I baked it using “sooji” or rava, whole wheat flour, curd, beetroot and “Rooh Afza”. Rooh Afza is the “summer drink of the east” because of its properties of cooling effect are enduring, which gives freshness and energy in very hot summer. It is used in Falooda, Kulfi, Phirni, Pudding, Kheer, Lassi and Milk Shakes. This cake is made of Rava or Sooji plus with whole wheat flour. Beetroot (my favorite veggie) adds beautiful pink color. Mother’s Day Special | Rooh Afza Beetroot Cake Baked In Pressure Cooker | Recipe With Rooh Afza

Ingredients:
Sooji or Rava or Semolina – 1/2 cup
Whole Wheat Flour  – 1/2 cup
Powdered Sugar – 3/4 cup
Curd or Yogurt – 1/2 cup
Refined Oil – 1/4 cup
Rooh Afza – 1/8 cup
Boiled Beetroot – 1 & 1/2 cup (2 small Beetroot )
Baking soda – 1/4 tsp
Baking powder – 1/2 tsp
A pinch of Himalayan Salt

For Topping:
Roasted pumpkin seeds – 1 tbsp
Chopped Pistachios – 4 tbsp
Fennel – 1/2 tbsp
Sweet Fennel – 1 tbsp

Method:

  1. In a pan add grated beetroot with sugar. Cook on low medium flame till mixture thickens.
  2. Add rava, whole wheat flour (sieve), fennel seeds, salt in a bowl.
  3. Wet ingredients: In a grinder add curd, oil, beetroot sugar paste, roohafza. Make a smooth puree.
  4. Now add rava whole wheat flour mixture into wet ingredients. Keep aside for 20 minutes (covered).
  5. After 20 minutes (add 2 tbsp of milk if the mixture looks dry) add baking soda, baking powder and mix it well.
  6. Put batter into a greased baking pan and sprinkle topping over cake and with help of spatula press topping gently. Tab the pan.
  7. Bake in the cooker for 60 minutes.

Tips:

  1. Adjust sugar according to your taste.
  2. Baking time may vary.
  3. If cake batter looks dry, add 2- 4 tbsp of milk.
  4. If baking in Oven: Bake in the preheated oven at 180 deg Celsius or around 360 Fahrenheit for about 1 hour. The baking time may vary. So keep checking the cake after 40 to 45 minutes.
  5. For Boiled Beetroot: Boil medium size beetroot in a pressure cooker and then peel the boiled beetroot. Cut boiled beetroot into small cubes.
Summer Treat

Pressure Cooker Method:
Grease the baking tin with oil and dust it by sprinkling whole wheat flour over greased surface evenly. Pour the mixture into the greased baking tin.

Important Notes:

  • Use the baking tin of 6 inches in diameter, so that it can easily get into the pressure cooker.
  • Use a 5-liter pressure cooker. It should be big enough to hold the baking pan.
  • Baking Tin should be made of Aluminium.
  • If baking tin comes into direct contact with the base of the pressure cooker, it can burn ( overbake ) the cake. So use pressure cooker container which has big holes in it or any aluminum small stand.
  • No gasket and whistle are needed. Remove them before baking.
  • Don’t add water to the pressure cooker.

How to Bake In A Pressure Cooker?

  1. Heat the pressure cooker on high heat for 2 minutes. Use sea salt or sand as a layer inside a cooker. Put a steel stand on a layer of salt or sand.
  2. Now put the cake tin containing the cake batter ( Do not put water inside the pressure cooker).
  3. Close the pressure cooker lid and do not put the whistle on the lid. Remove the gasket (rubber ring) from the lid.
  4. Lower the flame after 2 minutes. Let it bake for 50 -60 minutes on low flame. After 60 minutes check cake with a knife, if the mixture does not stick, it means the cake is done.
  5. If batter still sticks to knife then again bake for another 10 minutes. Do not open the lid immediately.
  6. Eggless Pressure Cooker Cake is ready.

Bottle Gourd or Lauki Halwa | Vegetable Dessert | Halwa Recipe

Bottle gourd or Lauki Halwa is a vegetable dessert. It is a simple and delicious dessert recipe prepared from grated lauki, milk, sugar and fresh malai (cream). Roasted fennel seeds and cardamom give a refreshing flavor to the Halwa.

Vegetable Dessert

Bottle gourd contains less in calories with no fat. It also contains essential vitamins and minerals like Vitamin C Vitamin B, Vitamin K, Vitamin A, Vitamin E, Iron, Folate, Potassium, and Manganese.  It is one of the best things about summer. Have it as juice, in a sabzi or in soup, you will reap benefits galore from this water-rich vegetable.

Lauki Halwa

Lauki halwa is a sweet Indian dessert made with bottle gourd, milk, ghee, sugar and flavored with cardamom and nuts. This is a well known variant of halwa made with a vegetable – here in this case with Bottle Gourd which is also called as Lauki or Ghiya in Hindi and Dudhi in Marathi languages.

Ingredients :
Grated Lauki – 1 medium size
Milk – 3/4 cup
Fresh thick cream – 1/4 cup
Sugar – 1/2 cup
Ghee – 3 tbsp
Roasted Fennel Powder – 1/2 tsp
Cardamom powder – 1/2 tsp
Chopped dry fruits – 1/4 cup
A pinch of salt
Soaked & sliced pistachios – 8

Method :

  1. Soak pistachios in 1/2 cup of water for 20 minutes. Then peel and slice them. Keep it aside.
  2. Heat ghee in a nonstick deep kadhai and add grated lauki. Cook till all the water dries up on a low flame for 5-8 minutes.
  3. Then add milk and fresh milk cream bring the whole mixture to a boil and then lower the flame.
  4. Cook the mixture on a low flame and keep on stirring in between. When the milk reduced to 75% then add sugar and mix it well.
  5. Stir continuously and cook until almost moisture is evaporated until mixture turns thick. It takes 5-6 minutes.
  6. Then finally add cardamom powder, roasted fennel powder, salt, and mix well.
  7. Garnish with sliced pistachios and its ready to serve.

The added bonus is these popsicles are made of fresh fruits, NO SUGAR added. In this popsicles, I used freshly squeezed orange juice, kiwi to fill out the molds and they turned out super delicious.

No Sugar Summer Healthy Treat – Kid’s Favorite

Kiwi green flesh is sweet and tangy. It’s also full of nutrients like vitamin C, vitamin K, vitamin E, folate, and potassium. They also have a lot of antioxidants and are a good source of fiber. Whereas, Oranges are well known for their vitamin C content. It boosts your immune system and improves your skin; they also aid with heart health, cholesterol levels.

Goodness Of Fruit

Ingredients:
Ripe Kiwi – 4
Fresh Orange Juice – 2 cups ( Juice of 6 Oranges)

Method:

  1. Peel and slice the kiwi fruit and place in a blender or food processor with the orange juice (with dough chopper ).
  2. Pulse until smooth. Pour into a popsicle mould.
  3. Now tap the moulds. Freeze them for 6 hours.
  4. For Demold Popsicles – Run under warm water until popsicles slide out of the mould.

Tips:

  • Don’t grind kiwi in the blender else kiwi seeds will grind along with the pulp.

Whole Wheat Carrot Banana Cake | Healthy Carrot Cake | Wholesome Fruit Cake

Got a ripe banana or two sitting around? Lets Bake. Ripe and overripe bananas are a superhero of whole-food, plant-based baking, keeping things moist while adding flavor and natural sweetness. Super ripe bananas and freshly grated carrots work best in this recipe. I swapped all-purpose flour with regular whole wheat flour and it gives a perfect grainy texture.

Healthy Carrot Cake | Wholesome Fruit Cake

This delicious Wholesome Cake recipe is made with bananas, grated carrots bringing the best of both worlds to one bake. Add a variety of dried fruit like red cranberries to pack this cake full of flavor and top with toasted sesame seeds a special finish.

Healthy Carrot Cake

Ingredients :
Ripe Banana – 4 (small size)
Whole Wheat Flour – 1 & 1/2 cups
Brown sugar – 1/4 cup
Refined Oil – 1/4 cup
Grated carrot – 1 cup
Dried cranberries – 1/2 cup
Baking powder – 1 tsp
Baking soda – 1/2 tsp
Sesame seeds and Dried cranberries (3 tbsp each) toppings
A pinch of Himalayan pink salt

Wholesome Fruit Cake

Method:

  1. Soak dried red cranberries in a 3/4 cup of warm water for 20 minutes.
  2. Remove water and dry them completely. Keep them aside.
  3. Dry Ingredients – Sieve whole wheat flour, baking soda, baking powder, salt, directly in the bowl. Add grated carrot with soaked red cranberries and mix them well.
  4. Wet Ingredients – In a mixer add bananas, brown sugar, oil, and grind until smooth.
  5. Now mix wet and dry ingredients well. Put the batter into a greased pan and tap the cake pan on a countertop to release any large air bubbles.
  6. Sprinkle topping over batter and with help of spatula press nuts gently.
  7. Tab the pan on a countertop to release any large air bubbles.
  8. Put the pan into the preheated pressure cooker and bake it for 1 hour.
  9. When the cake is done, allow to cool for 10 minutes. Remove the cake from the pan and set them on a rack set over a tray or sheet pan.
  10. Allow the cake to cool completely before slicing and enjoy.

Fruit Dhokla

Summer Special Dhokla

Ingredients:
For Dhokla Batter:

Rava – 1 cup
Curd – 1/2 cup
Water – 1/2 cup
Oil – 1 tbsp
Eno – 1 tsp
Red chili powder – 1 tsp
Finely chopped coriander leaves – 1/4 cup
Juice of one lemon
Salt to taste

Mango puree:
Mango – 1 medium size
Green Chilli – 2

Tempering:
Mustard Seeds or Rai – 1/2 tsp
Oil – 1/2 tbsp
White sesame seeds – 1 tbsp
Water – 1/2 cup
Green Chilli – 2 ( cut lengthwise)
Lemon juice – 1 tbsp
A pinch of salt

For Garnishing :
Chopped Mangoes and Kiwi – 1/2 cup

Mango Rava Dhokla

Method:

  1. Peel the mango and grind it with green chili in a grinder to make a smooth paste.
  2. Mix all dhokla ingredients and mango puree (except red chili powder and Eno). Keep it aside for 30 minutes (covered).
  3. Keep 2 cups of water in a deep kadhai and put a stand in it. Cover it and let it boil for 5 minutes.
  4. Now add Eno in a soaked batter and mix it well.
  5. Pour prepared batter into a greased dhokla pan sprinkle red chili powder and steam for 15 minutes on medium flame.
  6. Check with a toothpick if it cum out clean then it’s done. Allow it cool down completely.
  7. For Tempering: Heat oil in a small pan. First, add the mustard seeds. Let them pop first.
  8. Add white sesame seeds, green chili and allow to crackle. Now add water, lemon juice, salt and let it boil for 1 minute. Switch off the flame.
  9. Spread tempering over mango dhokla and cut into the desired shape.
  10. Garnish with chopped mango and kiwi. Enjoy yummy, soft Mango Rava Dhokla.

Ready in 5 minutes, this sunshine yellow kiwi mango smoothie is super creamy, filling, and high in vitamin C. Healthy and delicious, it’s the perfect way to start your day.

When the last of late winter and spring colds going around, smoothies are perfect for getting a large dose of vitamin C, potassium, and other immune-boosting nutrients. I love using fresh fruit in my smoothies, especially as we enter spring. You still have the last of the winter citrus and kiwis in the markets, but also start seeing some of the warm weather flavors.

For this smoothie, it is best to use well-ripened kiwis. Unripe kiwi is very tart and will affect the smoothie. To determine if your kiwi is ripe you can give it a gentle squeeze and if it gives slightly then it is ready. You shouldn’t have to squeeze it hard, just a little bit. Really soft kiwi is overripe and can taste a little fermented. It is still usable for things like smoothies, but the flavor isn’t perfect.

Yellow Kiwi Mango Smoothie

In this smoothie I used yellow kiwi. Gold kiwifruit, in contrast, has smooth, hairless skin that’s a nice golden-brown color. Slicing the fruit in half reveals even more differences. Green kiwifruit has, as one would expect, a green flesh with black seeds. The flesh of our golden kiwifruit is a vibrant yellow color with a smaller core and fewer seeds.
